A 4th of July "Oops!" (Sweetened Berries, NOT pops)
Red, white, and blue. All the right elements for an Independence Day treat.
Except that beyond that, this is not at ALL what I was hoping it would be.
This was supposed to be my Sundays with Joy post. These little cups were supposed to freeze and make my version of Joy's chocolate raspberry fudge pops. I thought I would make them a little patriotic and I got all creative...
Oops.
As you can see, it didn't freeze. These cups were in the freezer for HOURS. Like 18. And they are still not frozen.
The berries? They froze.
The milk concoction I made? Not so much.
And the funniest part about all this is that I even had a wise kitchen sage (you know who you are ;) ) give me great alternatives -- coconut milk, etc. But I thought I would try it on my own. HA!
So, I don't have popsicles. I will have to make those another time. But that doesn't mean this was a flop. I mean, who doesn't like a little leite condensado on their fruit? If you knew my Brazilian husband, you would know this was a super hit with him, whether or not he ate it with a spoon.
I guess it is time to get myself in the kitchen and whip up something else for our BBQ today... wish me luck! ;)
The Recipe, just in case someone out there wants to try...
1 can sweetened condensed milk
1/4 cup heavy cream
1/4 whole milk
1 teaspoon honey
1/2 cup white chocolate chips
1/2 cup blueberries
1/2 cup raspberries
Mix the first four ingredients in a medium pot and cook over med heat until well mixed, about 5 minutes. Remove from heat and let cool, five minutes. Stir in fruit and white chocolate chips. Don't even bother trying to freeze... just enjoy when it is cooled down :)

I'd go for sweetened berries anytime! I love how kitchen mishaps often end up being a great surprise hit
